Gluten Freedom: 5 Things They Don’t Tell You || tuja wellness

My newest article over at tuja wellness covers a few (fun?) things they don’t tell you about diving into a new gluten-free lifestyle.

You might shed a few tears, miss a few foods, and find some new products, but there’s definitely some positive parts of living the gluten-free life. Check it out here.

(Also… So many updates to come! Giveaway winners, Disney recap, new recipes, lots of events, awesome reviews, and more!)

I made a cake. Giveaways and discount extended!

Today I made a cake. It is so delicious. I’ve also eaten an awful lot of frosting. Here’s a bit of a sneak peek.gluten-free vegan maple cake.jpg

The recipe will be in my next Standard article, but note this: there is maple involved, and a lot of it.

That being said, I had a great day, so let’s celebrate with extending this giveaway.

You have ’til Monday (it IS a holiday, after all!) to enter.

You can win one of two copies of The Allergy-Free Cook Bakes Cakes and Cookies or one of two GF Coaching sessions.

In addition, I’m offering coaching sessions for half price until Monday. You don’t have to have your session between now and then, but as long as you book it, you get 50 percent off!

Luscious truffles, giveaway, and more!

The best thing about Valentine’s Day is that it is a day that revolves around chocolate. And I really like chocolate. Really, really like it.

I haven’t done too many chocolate things on this blog, mostly because they’ve all made their way into my books somehow. But my favourite? These Chocolate Cream Truffles.

If you’ve snagged The Allergy-Free Cook Bakes Cakes and Cookies, you’ll be happy to note a lot of chocolate makes its way into there. And around this blog. And in my house.

In other news, do not forget about the giveaway! You have until THIS FRIDAY (the 15th) for a chance to win one of two copies of The Allergy-Free Cook Bakes Cakes and Cookies and one of two Gluten-Free Coaching sessions. Also until Friday, folks can get 50% off a GF Coaching session.

Finally, I’m going to Disney World soon, and like last years, am so excited to eat! I can’t wait to give you the full food report!

Book Launch and Giveaways!

Hey everyone!

So in honour of Saturday’s Book Launch for The Allergy-Free Cook Bakes Cakes and Cookies I’ve put together a few giveaways for the folks who couldn’t make it out.

This is my first giveaway that I’m running off the site, so hopefully I can make this happen with ease.

Screen Shot 2013-01-09 at 8.36.34 AMThere are four prizes to be won. Two are copies of The Allergy-Free Cook Bakes Cakes and Cookies and two are GF Coaching sessions. In addition, I’m offering coaching sessions for half price until the giveaway is over (the sessions have to be booked during that time, though can be held at a later time).

To enter, leave me a comment below about which specific recipe you would make first from The Allergy-Free Cook Bakes Cakes and Cookies and how you would benefit from a GF Coaching session. The recipe index is here. This step is mandatory to enter the giveaway.

You can also gain more entries by:

  • Follow me on Twitter and write an additional comment below that you did (otherwise, I may not see it).
  • Like me on Facebook and write an additional comment below that you did (otherwise, I may not see it).
  • Tweet about the giveaway with the phrase tagging me and mentioning this post and write an additional comment below that you did (otherwise, I may not see it).

So you can have up to four entries! Each comment will be a separate entry (and be sure to comment for each one). Be sure to include your email address when you register for your comment (it isn’t published) so I can contact you if you win.

Contest ends February 15th, 2013, midnight. No purchase necessary. Open to folks living in the US and Canada. GF Coaching winners must have FaceTime or Skype (local residents can be in person). Winners will be notified by email and response is required by February 19th. No response will result in a new winner being drawn.

Good luck!

To take advantage of the discounted GF Coaching session, email me to book an appointment.

Book launch! Next Saturday! (February 9th, 2013)

I’m very, very excited about the upcoming Book Launch for The Allergy-Free Cook Bakes Cakes and Cookies.

Mostly because I’m very, very much in love with cakes and cookies.

This book, I promise you, is fantastic. Fluffy, moist cakes, frosting loaded on cupcakes, so many cookies, and bars, squares, biscotti galore.

Screen Shot 2013-01-09 at 8.36.34 AM

And they are all gluten, dairy, egg, and soy-free. Free of many other allergens. No nightshades. Minimal legumes (and no legume-based flours). Oh, and whole grain and free of refined sugar. AND vegan. AND taste just like the real thing. Trust me… I have picky eaters and picky testers (just the way I like it.)

So are you coming to the launch? You can meet me, if you haven’t. I’ll sign your book. It’ll be available for a discount. The Allergy-Free Cook Bakes Bread will also be there, discounted. I’ll have a few prizes, some samples from the book, and it is hosted at the most wonderful Bamboo Natural Food Market where you’ll definitely want to stay and shop.

For more info on the book and all of its details, visit http://theallergyfreecook.com/. I’ve included recipe lists, the table of contents, and photos to come early this week!

So next Saturday, the 9th of February, between 2pm and 4pm… I reckon you’ll be heading to 211 Martindale Road in the Huntington Square Plaza (at the corner of Erion) to come say hello.

Folks who preordered, you can pick up your book there!

Now… I still have to figure out what to bake for the event!

Sweet Thai Nori Crisps [gluten-free, soy-free vegan]

These might not exactly scream “Super Bowl” when compared to, say, loaded nachos, wings, and other football-inspired food, but they’re right up there with anything else that you “can’t-eat-just-one”.

But unlike a bag of chips, if you do eat them all, you’re benefiting your body as opposed to overdoing on indulgence.

But that’s neither here nor there. Instead, just make these, okay? You’ll be glad you did.

When we think of a snack “seaweed” doesn’t really come to mind. But nori is great for more than just sushi! Roll it around your favourite sandwich ingredients, or crisp it in the oven with some extra flavor for a perfect snack. Continue reading

Chili-Lime Corn Chips with Edamame Guacamole [gluten-free, vegan]

So the Super Bowl is soon. And really, I don’t follow football. In fact, I’ve never watched a (full) game. I think I am in the great minority when I say that my favourite sport is baseball.

I don’t watch hockey, football, golf, or tennis, which seem to be rather popular. Baseball for the win!

And if an extra lump some of cash fell into my lap, I would buy seasons tickets for baseball in a flash (well, there are likely some other things I would buy first, but I mean some extra extra cash.)

The one thing I do know is that any sort of event (Super Bowl included) means I can create themed recipes. And any excuse for creating new recipes is fine by me. Especially when it includes chips and dip, like these chili-lime corn chips with edamame guacamole.

Imam Bayildi (Turkish Stuffed Eggplant) [gluten-free, vegan]

One thing is for certain: true cultural cooking cannot be purchased pre-made from our grocer’s freezer, primarily because of the one similarity that spreads across each kitchen: a focus on fresh, whole ingredients, mingling with ethnic delicacies, all with a personalized touch.

One amazing benefit to eating vegan is how many options are available when we dine on dishes from other cuisines. While plenty of American and Canadian dishes depend on meat and dairy, others focus more on versatile beans, a wide variety of grains, and plenty of fruits and vegetables, with herbs and spices as the main flavor enhancers. What’s more, a lot of these dishes are naturally gluten-free.

Am I an expert in cooking dishes highlighting other cultures? Absolutely not. But I really like to try.

Gluten-free flours baking tips + chart || tuja wellness

As I’ve mentioned I’m the gluten-free columnist over at tuja wellness. My latest article covers the details on baking with new gluten-free flours, a condensed version of my long-winded (!) details in The Allergy-Free Cook Bakes Bread and The Allergy-Free Cook Bakes Cakes and Cookies.

Side note: Did you know that The Allergy-Free Cook Bakes Cakes and Cookies is now available? I’ll be updating all of the details (most are there) on my website, the book launch is February 9th, and these biscotti are amazing (and in the book):

But let’s get back to the flours. Focus, Laurie, focus. (If you know me in real life, I get really distracted and start talking about food and recipes randomly in most (all?) conversation).
