I haven’t had much time to update but have been making a slew of goodness.
Among them, a Cinnamon Swirl Sweet Potato Bread (to be in the cookbook).
Mushroom + TVP mole with roasted sweet potatoes and broccolini.
Easter cookie decorating (in lieu of eggs). Homemade dyes made with strawberries, blueberries, turmeric.
Included bunnies. Brownie-roll out bunnies, actually.
Included carrots. Wanted gingerbread despite being terribly unseasonal, so I added raisins to justify them.
Also included flowers. Slightly chewy, a little tender, really tasty sugar cookies.
Easter Dinner: along with orange-roasted asparagus, a few tofu quiches with a cracker crust, roasted broccoli/tahini salad, greens with avocado/orange dressing, was this awesome sweet potato, corn and kale chowder. Recipe-asking all around.
And finally, a terrible picture of not-terrible-in-the-least (read: fabulous) chocolate chip scones. Tender crumb, buttery (read: Earth Balance-y), chocolately goodness. Made a perfect dinner alongside pan-fried tofu, a fresh grapefruit, and roasted cauliflower. Weird combo, but oh-so-breakfast-for-dinner delicious.
