It’s been a bit…

Ah, yes, it’s been a few days since I’ve likened myself to return to updating my blog. Hectic as always, but now more than ever, I work everywhere.

I’ve not had much for else, at all. Frankly, I’m still living on a multitude of tofu scrambles.

So what does this tofu scramble consist of? Always the same, when I’m in a pinch. Saute onions, garlic, red/yellow/orange bell peppers, mushrooms. Crumble in tofu, deglazing with water, letting it simmer together, cooking down, absorbing the deliciousness. During this, I add some crushed, dried oregano, basil and thyme, and a sprinkling of sea salt. After generously dousing it with nutritional yeast, I continue to simmer/deglaze, for about 20 minutes, while I prepare whatever else I am eating with it.

And that, my friends, has been one meal per day for the last three weeks or so.

I’ve also continued to bake for my upcoming cookbook, but most of my time is working.

The chilly winter is still among us, with snow dusting our lawns. Regardless that we are nearly into Spring, mother nature frankly doesn’t seem to really care.

img_1759The good thing, I find, about winter is that I long for comfort food – baked goods, chilis, soups and treats. As the summer draws near, I far prefer salads and cold dishes, raw meals, and ice “cream”.

I’m beginning to lose interest in my heavy meals, indicating, for me, the sign of Spring. Other than the few rainy days we’ve had, the sun beams have shone into the kitchen, warming it regardless of the temperature hiding in the fresh air.

img_1767On a side note, Christmas was home to a gift to my wonderful mom, who is slightly obsessed with the television show So You Think You Can Dance Canada (also, may I add, obsessed with the American version).

For the holiday gift, then, I bought her tickets to the show, offering to go with her. She was delighted, much to my happiness! I, having seen the show only briefly here and there, was also excited to go with her, as live dancing is beautiful and artsy and a wonderful self-expression.

The show, then, was in February, and it was great! Because flash photos aren’t allowed, my captures were not excellent, but still great memories frozen in time.
