Christmas I of III

Still not feeling up to par, Christmas I came and went. This season, we are celebrating Christmas thrice – once with my sister and her husband, before their Christmas spent across the country in Vancouver; once with my dad’s side of the family; once with my mom’s side of the family.

Still under the weather but brimming with excitement, yesterday was a mini-Christmas feast complemented with a huge snow storm that began on Thursday.

Christmas I dinner featured chicken cacciatore (we agreed one main meat dish, the rest vegan), a vegan lasagna with homemade basil “ricotta” and chunky marinara, a mediterranean-esque roasted broccoli salad, green beans with fried mushrooms and shallots, and a “Ceasar” salad. Excellent.

And even more excellent? There were leftovers for today.
